At Yankee Lobster Fish Market, we harvest our lobster from the clean, cold water of the North Atlantic at peak health, when blood protein levels are highest and shells are hardest. Other lobsters may be harvested during the shedding stage and can yield up to 50% less meat (soft shell lobsters). A higher meat yield, greater survivability, and year 'round supply and service assures customer satisfaction and builds repeat business.
